Homemade fruit smoothies are an easy and refreshing afternoon snack. My kids often ask for sweet treats, but since we are limiting sugar in our diets, I try to find healthy snack alternatives. A fruit smoothie is simple to pack with healthy fruit and hidden vegetables. We often make berry and banana smoothies with a few carrots and spinach leaves blended inside all the yummy sweetness. These DIY Berry & Banana Unicorn Smoothies are a fun way to enjoy a mostly healthy sweet treat! (whipped cream optional)
Sneak Healthy Veggies into a Smoothie
Mix up a tasty Berry & Banana “Unicorn” Smoothie that’s topped with whipped cream and sprinkles. This healthy smoothie includes natural sugar from fresh fruit, antioxidants from frozen berries, and vitamins and nutrients from carrots, spinach and orange juice. Kids who otherwise might not eat carrots or spinach alone will enjoy getting their healthy nutrients in a delicious smoothie.
How to Make a Berry & Banana Unicorn Smoothie
A healthy fruit smoothie can be easily customized using any fruit ingredients. Our colorful Berry & Banana Unicorn Smoothie recipe includes two different smoothie flavors layered in a glass along with “edible blue slime”.
Banana Smoothie Ingredients
- 1 banana
- 1/2 cup pineapple chunks
- 1/2 cup orange juice
- 1/2 cup flavored yogurt (optional)
- 2 cups of ice
To make the banana layers for this smoothie, place these ingredients in a blender and blend until smooth. You will want the smoothie to be thick and spoonable to make the flavored smoothie layers in the glass. If the smoothie needs to be thicker, add more ice.
Berry Smoothie Ingredients
- 1 cup frozen berries
- handful of spinach leaves
- 1 small carrot, peeled and cut in half
- 1/2 cup orange juice
- 1/2 cup flavored yogurt (optional)
- 2 cups of ice
To make the berry layers for your Unicorn Smoothie, place the frozen berries, spinach, orange juice, yogurt and ice in a blender and blend until smooth. Again, make the smoothie thick by adding enough ice.
You can store these smoothie flavors in the freezer until you are ready to assemble the smoothie layers. To make clean layers, the smoothie flavors need to be thick so you can spoon each layer into the glass without mixing together.
Next, make the edible blue slime!
Homemade Edible Blue Slime
This optional edible blue slime adds a pop of color to these Berry & Banana Unicorn Smoothies. The blue slime is the less healthy part of this sweet treat, which can be offset by the fresh fruit, hidden veggies and Vitamin C packed orange juice.
Ingredients: Light corn syrup, blue Jell-o powder
To make edible blue slime, mix a spoonful of blue Jell-o powder into a small bowl of light corn syrup. If it looks grainy, you can heat up the corn syrup in the microwave for 20 seconds and give it a stir.
The gelatin and light corn syrup will congeal together to make an edible blue slime you can drizzle on the inside of the smoothie glasses.
Assemble the Layers of a Berry & Banana Unicorn Smoothie
Next, it’s time to assemble the layers of these colorful Unicorn Smoothies!
Drizzle a glass with the edible blue slime.
Remove the thick banana smoothie and the thick berry smoothie from the freezer and begin layering. Spoon the banana smoothie into the bottom of a glass, making a 2 inch layer. Follow with a spoonful of berry smoothie, making another 2 inch layer. Gently pat the layer down. Spoon another layer of banana smoothie into the glass, followed by a layer of berry smoothie.
Don’t pour the smoothies, which will cause the layers to mix together.
You can top these Berry & Banana Unicorn Smoothies with whipped cream, sprinkles and extra edible blue slime drizzle.
Berry & Banana Unicorn Smoothies are fun party treats and creative snacks to enjoy on a summer afternoon. If you need to make them in advance, you can place the drinks in the freezer until you are ready to serve. Leave the whipped cream off until you are ready to enjoy the drinks. Kids can help make these at home and you can be as creative as you’d like!

You may remember when Starbucks released their limited edition Unicorn Frappuccino made with ice, milk, pink powder, sour blue powder, creme Frappuccino syrup, mango syrup and blue drizzle. We tried this drink back in April 2017. Although people eagerly posted colorful pictures of the drink on Instagram, the Unicorn Frappuccino was very sweet and reviews mentioned a slight metallic aftertaste.
