Endive Appetizers with Blue Cheese & Pomegranate

In my opinion, the holidays are a great excuse to make fancy goodies! I love being creative for special occasions. When I’m planning a party or going to one, I love experimenting with gourmet ingredients. Endive appetizers with blue cheese and pomegranate are a flavorful combination of savory, sweet, and salty in one delightful bite. They’re the perfect holiday appetizer because they look fancy and taste amazing. Additionally, the pomegranate adds a pop of color. Learn how to easily make these tasty appetizers for your next party!

If you can mix ingredients, you can make endive appetizers with blue cheese and pomegranate. These take just a few minutes to put together. Endive can be hard to find in the winter, but I managed to find some at our local grocery store.

Endive Blue Cheese Pomegranate Bites Ingredients

  • 1/4 cup blue cheese crumbles
  • 1/4 cup pecans, chopped
  • Half of a pomegranate, shelled
  • 1 tablespoon maple syrup
  • 1 pinch sea salt
  • 2 large endives

Instructions

Begin by coarsely chopping the pecans. Next, roast them in a dry frying pan until just browned. Remove from the heat and stir in the maple syrup. Sprinkle with sea salt.

Trim off the bottom of the head of endive and gently remove the leaves, one at a time. Rinse each endive leaf and gently pat dry with a paper towel. Arrange the endive on a serving plate.

Mix together the blue cheese, pomegranate seeds and roasted pecans in a bowl. Spoon the mixture into each endive leaf. Enjoy!

Additional Tips

The larger the endive leaves the better to hold the blue cheese, pecans and pomegranate seeds. Also make sure the leaves aren’t wilted.

I chopped up a handful of pecans and dry cooked them for a few minutes in a skillet until visibly browned. Remove from the heat before adding the maple syrup, which will instantly caramelize the hot pecans. Mix the pecans together with the blue cheese crumbles and pomegranate seeds.

I found it easiest to shell the pomegranate in a large bowl placed in the sink. This prevented the pomegranate juice from splashing everywhere as I removed the seeds.

Endive Appetizers

Combining endive with blue cheese and pomegranate creates delicious flavor. Even people who don’t normally like the strong taste of blue cheese will likely enjoy them, if they are willing to try a bite! The sweet and savory flavors come together in a perfect combination of nutty, salty, tartness. We created unforgettable memories exploring these We created unforgettable memories exploring these iconic Roman landmarks with our kids! 🇮🇹⛲️ Trevi Fountain — Built in the 1700s, this Baroque masterpiece is where three ancient roads once met. The scale and details are incredible! Standing 85 feet tall and over 160 feet wide, it’s one of the largest fountains in the world!🇪🇸 Spanish Steps — Completed in 1725, these 135 steps link Piazza di Spagna to the Trinità dei Monti church above. We all enjoyed the exercise while climbing these iconic stairs. 🏛️ Pantheon – Nearly 2,000 years old, it’s the best-preserved ancient Roman building. Our kids were amazed by the giant columns (each carved from a single piece of Egyptian granite) and the open oculus letting sunlight stream through the dome.History came alive for all of us in Rome! It’s possible she’s been to more countries tha It’s possible she’s been to more countries than you! 😆 Did you know many Americans don’t own a passport, let alone have left the country? In contrast, countries in Europe are so close together, exploring other cultures is like visiting another state. 🌍I think it’s so interesting to consider the worldviews of people from different areas. Different isn’t bad, it’s just unique! Our Tuscany villa stay was straight out of a fairy Our Tuscany villa stay was straight out of a fairytale. ✨🌿🇮🇹This overnight at an “agriturismo” was perfect for our family of 6. We stayed in a cozy villa and settled in with a girls and guys room — hello family sleepover! 🫶🏻😴 We loved exploring the gorgeous tree lined lane, smelling roses, and sipping local wine while our kids played in the grassy yard.
