The holidays are a great excuse to make fancy goodies! I love being creative for special occasions. I typically don’t make elaborate meals but when I’m planning a party or going to one, I love breaking out the gourmet ingredients. These Endive Blue Cheese Pomegranate Bites are a flavorful combination of savory, sweet and salty in one delightful package. They’re the perfect holiday appetizer because they look super fancy and the pomegranate provides a pop of color. I’m excited to share how to easily make these tasty treats for your next party!
If you can mix ingredients together, you can make super fancy Endive, Blue Cheese, Pomegranate Bites. All you need are some holiday-inspired ingredients and about 30 minutes of your time. Endive can be tough to find in the winter, but I managed to find some at our local grocery store that tends to carry more obscure fruits and veggies.
Endive Blue Cheese Pomegranate Bites Ingredients
- 1/4 cup blue cheese crumbles
- 1/4 cup pecans, chopped
- Half of a pomegranate, shelled
- 1 tablespoon maple syrup
- 1 pinch sea salt
- 2 large endives
Instructions
Coarsely chop the pecans and roast them in a dry frying pan until just browned. Remove from the heat and stir in the maple syrup. Sprinkle with sea salt.
Trim off the bottom of the head of endive and gently remove the leaves, one at a time. Rinse each endive leaf and gently pat dry with a paper towel. Arrange on a serving plate.
Mix together the blue cheese, pomegranate seeds and roasted pecans in a bowl. Spoon the mixture into each endive leaf. Enjoy!

Additional Tips
The larger the endive leaves the better to hold the blue cheese, pecans and pomegranate seeds. Also make sure the leaves aren’t wilted.
I chopped up a handful of pecans and dry cooked them for a few minutes in a skillet until visibly browned. Remove from the heat before adding the maple syrup, which will instantly caramelize the hot pecans. Mix the pecans together with the blue cheese crumbles and pomegranate seeds.
I found it easiest to shell the pomegranate in a large bowl placed in the sink. This prevented the pomegranate juice from splashing everywhere as I removed the seeds.
